Corn and Fritos Salad

Brought this tasty little salad to an office potluck, and the guys went wild for it. You will too! And best of all, it can be whipped together in less than 10 minutes.

Corn and Frito Salad

Ingredients

  • 1 (16 oz) can whole kernel sweet corn, drained
  • 1 cup shredded cheddar cheese
  • ½ cup mayonnaise
  • ½ cup orange or green bell pepper, chopped
  • ¼ cup red onion, chopped
  • ½ (9.25 oz) bag Fritos, broken into pieces

Instructions

  • Mix together corn, cheddar cheese, mayonnaise, bell pepper, and red onion.
  • Just before serving, gently fold in the Fritos.

Notes

To break the Fritos into pieces, put them in a baggie and tap lightly with a rolling pin. Does the trick every time!
Be prepared to eat the whole thing. This salad does not make a good leftover; the Fritos tend to get soggy and limp.

Seriously, this is such a popular side dish, there won't be anything left over.
