Sometimes you want to treat yourself to something you usually serve only to guests. Tasty and good for you, this guacamole is a winner.
Best Guacamole Ever
Ingredients
- 2 ripe avocados
- 1 tablespoon fresh lime juice
- Salt and black pepper
- 1 Roma tomato, chopped
- ½ cup sweet onion, diced
- 3 tablespoons sour cream
- ½ teaspoon garlic, minced
- ⅛ teaspoon ground cumin
- ½-1 teaspoon fresh cilantro, optional
- 2-3 drops hot pepper sauce
Instructions
- Cut the avocados in half and remove the pits. Then, using a spoon, scoop the avocado out into a small bowl.
- Coarsely mash the avocado and lime juice with a fork. Add salt and pepper to taste.
- In another bowl, combine the remaining ingredients; add to avocado mixture.
- Cover with plastic wrap directly on surface of guacamole; refrigerate for 5 minutes.
- Serve with tortilla chips, vegetables, or whatever your heart desires.
Notes
Avocados that yield to gentle pressure should be eaten within a day or two. If you're planning to use the avocados a couple days out, get firm instead. Firm, unripe, or green fruit take four to five days to ripen at room temperature.
You can substitute ½ diced jalepeño pepper for the hot pepper sauce. But if you do use the jalepeño pepper, be sure to seed it so the guacamole has just the right amount of bite without being too spicy hot.
Also, any kind of tomatoes can be used, but remove the seeds. Otherwise, your guacamole will be too wet.
The recipe can easily feed two people without adjusting the ingredients by increasing the serving size, but calorie count will go up.
We use guacamole as a dip, on toast with eggs for breakfast, in grilled cheese sandwiches, and with tacos. So good!
Store guacamole in a covered container in your refrigerator with a layer of plastic wrap directly on the guacamole's surface, squeezing the air out. If you don't have a covered container, put another layer of plastic over whatever container you’re using. This keeps the guacamole from turning brown. If it does happen to turn brown, skim off the top layer before serving.
