Soup is one of our favorite comfort foods. It’s easy to make and always turns out delicious. Granted, some soups require more prep time than others, but whipping one up is generally painless. Just follow the recipe, throw everything in the pot, and let it simmer.
Best of all, soup tastes great the next day—reheated, after all the flavors have had time to merge—and there is usually plenty left over for another meal or two. Just microwave for a couple of minutes, and dinner is ready with no fuss—which is huge plus for empty nesters as well as anyone on the go.
